Cempedak (Artocarpus integer) is a tropical fruit typical of Southeast Asia that, at first glance, closely resembles jackfruit; however, it is characterized by a thinner skin texture and a much more pungent, piercingly fragrant aroma when ripe. Inside its smoothly bumpy skin lies a deep yellow to orange flesh wrapping around its seeds, featuring a very soft, slippery texture and a rich, intensely sweet flavor that tends to be more concentrated than that of jackfruit. Uniquely, beyond the flesh which is commonly eaten fresh or fried into snacks, the entire inner portion of the cempedak—including the fruit strands (dami) and the seeds—can be processed and consumed after being boiled or cooked.
