The gandaria fruit (Bouea macrophylla), also known as jatake or the marian plum, is an exotic mango relative native to Southeast Asia.

When young (green), this fruit features a crunchy texture and is intensely sour, making it highly popular as an ingredient for rujak or raw, un-cooked sambal.

However, when ripe, the fruit turns a yellow-orange color with a soft, juicy texture, offering a highly refreshing sweet-and-sour flavor blend alongside a very distinct and sharp fragrant aroma
